RECIPE: Breaded & Baked Artichoke Hearts

Here's a quick and simple one to add to your recipe box. Kylie over at Fellowship of The Vegetable created this smashing six ingredient recipe featuring artichokes and our favorite flavor-topper: nutritional yeast. Despite its maybe not-so-appetizing name, did you know that nutritional yeast is packed with essential vitamins, minerals, and protein? Plus artichoke hearts are teeming with fiber and healthful antioxidants. 

This snack-er-onie might just be healthier than it looks! That's good news for us because we sure do love this tasty treat. Add a side of your favorite marinara, or maybe get crazy and try dipping them in Roasted Garlic, Horseradish, or Chipotle flavored Vegenaise. Enjoy!

Ingredients:

3 cups quartered artichoke hearts
1 cup panko crumbs
2 Tbs. nutritional yeast
1 tsp. black pepper
1 cup flour
1 cup almond milk (or your favorite non-dairy milk)

Directions:

1. Preheat oven to 400°F and in a big bowl combine the panko crumbs, nutritional yeast, and black pepper.
2. Pour the flour and milk into two separate bowls.
3. One at a time, dip each artichoke heart quarter into the flour, to cover completely; then dip the same one in the milk and into the panko crumbs, to coat well. 
4. Place each coated artichoke heart quarter onto a cookie sheet. 
5. Repeat until all pieces are breaded.
6. Bake for about 10 minutes or until the breading has browned. Serve hot.
